This tomato soup was shared on TikTok and it looks incredible. I don’t know about you, but the less steps in the recipe, the more I love it. Putting whole, fresh ingredients in a pot and turning it on happens to be my preferred way of cooking.

- About 4 cups of fresh tomatoes – use a variety
- 1 onion, cut in quarters
- 1 whole garlic bulb
- 3 whole cayenne peppers
- 2 cups fresh basil
- Olive oil
- Salt and pepper
- 1.5 cups coconut cream
- 1/3 cup coconut oil
Place all ingredients in a soup pot with half the basil (save the other half). Drizzle with olive oil and season with salt and pepper. Cover with a lid and simmer for about 40 minutes. Remove from heat.
Squeeze the garlic cloves out (ooh!) and stir into the mix. Stir in coconut cream and coconut oil.
Blend it into a puree? I didn’t see the originator use an immersion blender but I would imagine that would make this just lovely. Top with fresh chopped basil and stir one more time. Here’s a pictorial taken from screen shots:
An entire bulb of garlic and you don’t even have to peel it? I’m excited already.

When I first saw this, I thought it was creme fresh. I’m thinking that could work too… but for this vegan recipe, coconut cream does the job. <3
