Sweet Potato Casserole with Pecans

Looking for an exciting and different way to make sweet potatoes this Thanksgiving? This recipe was adapted from a southern cooking website that I had found at some point over the past 10 years.

Rich with butter and spicy sweet goodness, this is not exactly Health Food nor is it low carb for low fat by any means.




But a small serving for each dinner guest will surely compliment the turkey, green beans, cranberries and other holiday fare.

Sweet Potato Casserole, What to Buy:

  • 10 or so sweet potatoes

If you’re planning on making a full pray of this to serve a group, go with the big box of sweet potatoes in bulk like they have at our shoprite. You’ll have more than enough to bring or serve at Thanksgiving.

Also pick up:

  • Eggs
  • Butter
  • Brown sugar
  • Vanilla
  • Milk, either regular milk or condensed is fine
  • Cinnamon or other pumpkin pie spices
  • Pecan halves

Don’t forget the pecans, this recipe just wouldn’t be the same without them.

Sweet Potato Casserole with Pecans

Sweet Potato Casserole Recipe

Prep in advance before making your sweet potato casserole. You’ll need to bake the sweet potatoes first which you might want to do earlier in the day or even the prior day.

Ingredients:

  • 8 to 10 sweet potatoes, baked and peeled
  • 4 eggs
  • 1 stick butter, melted
  • 1 cup brown sugar
  • 3 tsp cinnamon or pumpkin pie spice mix
  • 2 tsp vanilla
  • 2 cups milk
  • 1 pinch salt



To make:

Add the sweet potatoes to a large mixing bowl and use a fork to mash them. Crack in four eggs. Add melted butter, brown sugar, cinnamon or pumpkin pie spice mix, vanilla, milk and salt.

Use a hand blender to mix this into a smooth puree. Preheat the oven to 350°. Pour this sweet potato mixture into a large greased baking pan. Sprinkle the top with pecan halves. Cover with foil to prevent the pecans from burning.

Bake at 350° for about an hour. After about 40 minutes remove the foil so that the pecans can brown slightly as the casserole finishes cooking.

Your sweet potato casserole is done when a toothpick inserted into the center comes out clean.

This is a sweet, savory and truly scrumptious side dish to have with your turkey dinner. Don’t be surprised if you get requests to bring this along for next year’s Thanksgiving feast!
