Here’s how to satisfy your sushi craving on a budget. This works if you keep your crispers stocked with fresh salad ingredients.
Step 1: Head to Shoprite for the fresh sushi catch of the day (as cheap as $6.99 or as much as $14.99 if you plan to share). Put sushi in fridge while you make salad.
Step 2: Throw together a quick salad with lettuce, carrot, shredded cabbage, cucumber, tomato, avocado or any combo of those.
Step 3: Make Japanese dressing. To do this, reach for your handy personal blender (I recommend the Chefman) and drop the following in:
- 1 carrot
- 1/2 inch piece of fresh ginger
- 2 shakes soy sauce
- 1/2 scallion cut in pieces
- 2 Tbs. olive oil
- 1 teaspoon sesame oil
- 2 Tbs. vinegar
- splash of water
Serve the salad with dressing poured on top. Plate along with the sushi and extra avocado slices if you have them. Economical sushi dinner, complete!
