Homemade Black Bean Burgers with Cilantro

\I don’t make veggie burgers much, and I don’t buy them due to dubious ingredients such as hydrolyzed soy protein and whey powder. Tonight I had all of the below mentioned ingredients available, so I tried my hand at black bean burgers. What a delicious meal!

I guess if you fry anything it will taste good. I like to think that the healthful black beans cancel out other, less beneficial things like the enriched bun. If you opt to have yours with a bun, I would make the burgers with more beans and less rice. Personally, I like to strike a balance between my proteins, starches and veggies. I also added a slice of provolone, but you don’t have to.



Ingredients:

  • 2 cups leftover black beans
  • 1 cup leftover rice
  • ½ cup grated onion
  • 1 egg
  • ½ cup fresh parsley
  • ½ cup fresh cilantro
  • 1 cup bread crumbs, or enough to hold into a patty shape
  • Adobo seasoning
  • 3 or 4 Tbs safflower oil

To Make:

Chop herbs and grate onion into the bottom of a large mixing bowl. Add all other ingredients with the exception of the bread crumbs, and mix well. Finally, add the bread crumbs little by little, mixing with hands until the desired “burger” consistency is reached.

Heat oil in large frying pan. Shape burger patties and fry in oil, turning down heat as needed. Drain on paper towels. Dress and serve as you would a regular burger made of meat. Yummy!!

Serve with side salad.
