Homemade Black Bean Dip

Love black bean dip? It’s delicious and good for you, not to mention super simple to prepare from scratch at home using just a few simple ingredients.



Ingredients:

  • 1 bag dried black beans, cooked through OR 2 large cans black beans
  • 4 cups water
  • 4 small cloves garlic
  • 3 Tablespoons safflower oil (plus 1 additional Tbsp of oil to cook beans in)
  • ½ cup fresh cilantro, chopped
  • 1 small onion, cut up
  • 2 or 3 Tablespoons balsamic vinegar
  • Juice of one lime
  • salt and pepper to taste

To make:

Place beans in blender along with some of the liquid they cooked in, until it’s about ¾ full. Add remaining ingredients. Process in blender until lump-free. If necessary, add additional liquid (such as cooking water from beans) slowly until desired consistency is reached.

If you prefer your bean dip a bit lumpy, you can save some of the unblended beans and stir them in last.

Store bean dip in Tupperware or similar container inside refrigerator. Eat in small servings, for lunch, or snack, or dinner, with gluten-free brown rice crackers, or whole grain chips.
