Not just for hippies, homemade granola makes you feel whole-body happy. The B-vitamin-rich oats soothe the nerves while giving a boost of brain power.
The protein and heart-healthy fat containing nuts and seeds nourish the endocrine system and get your hormones working. The honey soothes the tummy while adding natural sweetness. And the omega-fat rich coconut oil works its magic on the digestive system, heart and arteries.
Granola makes a perfect snack, breakfast or comfort food!
Ingredients:
- About 3 cups rolled oats
- 1/3 cup raw honey
- 1/4 cup coconut oil
- 1/3 cup pumpkin seeds
- 1/3 cup sesame seeds
- 1/3 cup sunflower seeds
- a few handfuls of raisins
- a handful of chopped dates
Spread oats onto a wide, shallow baking pan or cookie sheet. Sprinkle in pumpkin seeds, sesame seeds, sunflower seeds and mix lightly. Add the coconut oil and honey. Use your hands to mix all together, leaving clumps of ooey goodness.
Bake at 300 degrees for about 30 minutes, but be sure to stir carefully every 10 or so. Do not let granola brown – it tastes better if just cooked slowly and lightly. Remove from oven when lightly toasted. Mix in raisins, dates.
Store in air-tight tupperware or jar with lid. Enjoy as a breakfast cereal, yogurt topping, or road trip take-along snack.
