Here’s a tasty weeknight recipe that cooks up quick using leftover pork, fresh zucchini, bell pepper, garlic and onion. Boil a pot of pasta and you’re good to go.
Ingredients:
- 3 cups cooked pork cubes
- 1 small zucchini, sliced longways and then in half
- 1 red pepper, cut in chunks
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 2 Tbs olive oil
To Make:
Heat a pan of oil and drop the garlic and onion. Cook on medium-high heat, tossing frequently. Add zucchini and continue to cook, moving around the pan to heat all sides, until squash is translucent and fork-tender. Add peppers and cook to just slightly tender. Add pork cubes and stir-fry for several more minutes until cooked through.
Turn off the heat and let rest in the pan. Cook pasta according to package directions. Drain the noodles. Add the noodles to the pork stir-fry, tossing to incorporate. Season with salt, pepper and soy sauce.
