Leftovers: uninspiring day-old food taking up space in your fridge? Or, ready-made ingredients for the best burritos ever? You decide!
Ingredients:
Leftover cooked chicken
Leftover cooked black beans
Small corn tortillas
Small can diced tomatoes
1 green pepper
1 small onion
1 lime
1 avocado
shredded cheddar
Greek yogurt
Optional extras:
Cilantro, chopped
Jalapenos
Taco sauce
Hot sauce
To Make:
Prepare all “taco fixins.” Toast the tortillas in a small round frying pan that’s been rubbed with a bit of oil to prevent sticking. Pile on plate and cover.
Chop onion and pepper. Mix some of the onion in a bowl with the chopped avocado. Use the rest to make a salsa with the pepper and diced tomato (and cilantro if you have it). Dress it with lime, salt and pepper and mix well. Place cheese into a serving bowl. Do the same for the yogurt, and the salsa, avocado, and jalapenos if you’re using them.
Heat chicken and beans in microwave, then cover. Arrange all ingredient-containing bowls around set table, with lots of serving spoons. Invite family members in to make-your-own bean or chicken burrito. Eat. Be happy!
