Once you know how to cook you’ll realize that you can just keep on riffing on the same recipes using different ingredients.
Got a craving for seafood? A night out at a restaurant is not in the budget? Go the economical route and pick up a couple different cans of seafood at the supermarket.
I went down the tuna aisle yesterday and saw baby clams in a jar. The nice thing about the jar was that you could actually see the quality of the clam meat. So I picked some up.
Then I also got oysters which is something I never do but I thought what the heck. No it was not raw bar night at my house, but I did manage to satisfy my seafood craving on a budget.
Clams and Oysters Over Pasta Recipe
Ingredients:
- Three cloves garlic, minced or chopped
- 3 tablespoons olive oil
- One fresh garden tomato, cut in chunks
- 1 jar canned clams with the broth
- 1 tin oysters
- Half a cup of chopped cilantro
- One scallion, sliced
- Half a cup white wine
- Half a package of spaghetti or linguine
- Salt and pepper to taste
To make:
Saute garlic and oil in a sauce pan. Add the tomato chunks, stirring frequently. Add in the seafood and bring to a quick boil, then lower heat, add wine and let simmer for about 5 minutes. Stir occasionally.
Shut off the heat to the sauce and toss in the cilantro and scallion. Stir again.
Cook pasta according to the package instructions. Drain and save a bit of the pasta water.
Place pasta in serving bowls and ladle the seafood mixture over top. Mangia.
