Parmesan Tomato Zucchini Bake | Healthy Recipe, Program Approved

Here’s a healthy, easy recipe for those who have a tomato garden! From Jennifer Kaye, Total Health and Fitness Coach.

Parmesan Tomato Zucchini Bake

Makes 4 servings


  • 2 medium zucchini, sliced – total weight 13 ounces
  • 2 medium yellow squash, sliced – total weight 13 ounces
  • 5 medium tomatoes, sliced – total weight 13 ounces
  • 1/2 cup quality Parmesan cheese, shredded
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Italian spices


Preheat oven to 375 degrees.

In a baking dish, arrange zucchini, yellow squash and tomatoes in an alternating pattern (as seen in the photo).

Top with cheese and spices. Place into oven and bake for 20 minutes or until squash is soft.

Per serving:

3 vegetables
3 condiments
