Make Refreshing Iced Lemon Balm Tea

Whew! It’s hot! And it’s the perfect time to make an ice tea with refrigerant and diaphoretic herbs.

Diaphoretic herbs help to induce sweating and thus release heat from the body.

Types of diaphoretic herbs: peppermint, elderflower, chamomile, and catnip

Refrigerant herbs effectively help to keep you cool.

Refrigerant herbs: lemongrass, chrysanthemum, spearmint, lavender

Here’s a cooling, yin tonic tea to make as an overnight infusion:

2 parts lemon balm, 1 part hibiscus flower,

2 parts peppermint, 1 part elderflower, 1 part chamomile.

Place all herbs in a large mason jar. Cover with almost boiling water and steep on counter overnight.

In the morning, chill in the refrigerator, strain and enjoy!
