The ubiquitous tuna sandwich gets a fat-friendly facelift thanks to sushi inspired ingredients.
1 can tuna, drained
1 ripe avocado
1 small cucumber, peeled and diced – leave a few slices for garnish, too
1/2 carrot, shredded
2 Tbs grated onion (optional)
Makoto Japanese ginger dressing, to taste
1 whole wheat sandwich wrap
cilantro for garnish
Remove skin and pit from avocado. Place avocado in large bowl and mash with fork. Add tuna and flake/mix thoroughly. Add remaining ingredients except cucumber, and stir.
Place a scoop of tuna salad mixture in the center of wrap. Fold in the side closest to you, then fold in the left and right sides. Add cucumber bits on top. Roll up. Serve with cucumber slices and cilantro garnish.
